And what about more development of Kaneki's internal conflicts? That dude needed a whole therapist, let alone more episodes to process all the trauma.
We could have even had entire episodes dedicated to just eating coffee at Anteiku. Okay, maybe not entire episodes, but a girl can dream!

Part of the feeling that it was rushed probably comes from the source material. The manga is incredibly detailed and complex.
Fitting all that into a limited number of anime episodes? An almost impossible task. They had to cut things! It's inevitable.

That’s 60 glorious episodes of Tokyo Ghoul:re! Picture it! We could explore every nook and cranny of the Ghoul world.
Ultimately, we got 24 episodes. And while I appreciate what we got, a small part of me will always wonder "what if?" What if we had gotten a longer, more detailed adaptation?
