Tackle Liurnia (A Little)
Liurnia is vast, I know. You don't have to clear the whole area. Just poke around a bit.
Find some useful spells. Maybe that one that shoots sparkly rainbows. You know, for moral support.
Become a Sorcerer (Sort Of)
Even if you're a strength build, magic helps. A little Glintstone Pebble never hurt anyone (except maybe those Albinaurics).
Seriously, grab a staff. Fling some spells. Who knows, you might discover your inner wizard.

Learn to Parry (Maybe)
Parrying is hard, I get it. But it's also incredibly satisfying. Especially against those annoying knights.
Practice on some weaker enemies. Radahn probably won't give you many parry opportunities. But hey, it's worth a shot!
The Power of the Buckler
The Buckler shield is your friend. It makes parrying easier. Go get one.
Now go parry some wolves. Or maybe those soldiers near Gatefront. Don't get discouraged when you fail. We all start somewhere.
